Easy Shrimp and Deviled Eggs


Necessity is always the best motivation for creativity. We wanted some easy, light, and healthy snacks for Saturday and there was born the easiest shrimp. Literally drop all the thawed (preferably still raw) shrimp in a ziploc bag with some dressing and let it sit in the fridge until you’re ready to eat.

Grill for a few minutes on each side until opaque and serve. So easy, I can’t believe I’ve never done it before. Of course you could marinate with anything, but the Italian dressing was really good!


All of these guys got gobbled up pretty quickly.

Jenna also had a recipe for healthier deviled eggs that a friend had sent her so we decided to try that one too. I’ve never heard of honey with deviled eggs, but it was a fun surprise.  I think I would edit the recipe next time I try it – add in some cayenne or curry powder – it needed more spice.


Deviled Eggs

6 hardboiled eggs

6 tsp plain yogurt

2 tsp dijon mustard

2 tsp finely chopped onion (we didn’t put this in, maybe that’s what it needed…)

2 Tbsp honey

1 Tbsp paprika

1 Tbsp chili powder


Slice eggs in half and remove yolks. Combine yolks and rest of the ingredients until smooth. Spoon equal portions into egg halves and enjoy.

These were good as is, but I think I might reduce the amount of honey and up the spices.
